Tuwo shinkafa (Tuwon shinkafa) is a popular rice dish in Nigeria’s northern regions. It is typically served as a side dish to soups and stews and it is simple to prepare. Tuwo shinkafa is typically made from scratch with short grain rice (local rice), but rice flour can also be used (which is the easiest & fastest method).
If you are watching your cholesterol or gluten intake, it is also a suitable substitute for Eba and Fufu.
How To make Tuwo shinkafa from scratch (with uncooked rice), you’ll need the following:
- 500 grams of Short grain rice or indigenous rice (paella rice can be used as a substitute)
- 1000ml(1L) water (more or less)
Preparation:
- Rice that has been thoroughly washed and placed in a pot.
- Add water and bring to a boil.
- Rice should be boiled until it becomes very soft and sticky and the water has evaporated. (if the rice is not done before the water evaporates, you can add a bit more water)
- Now, using a wooden spoon or a potato masher, thoroughly mash the soft rice into a soft dough.
- Moisten your hands and form balls.
- Serve piping hot and enjoy.
How to make Tuwo shinkafa with Rice Flour, you will need the following:
- 500 grams of Rice Flour
- 700ml water
Preparation:
- Bring the water to a boil in a pot. Then, remove some water and set it aside.
- Pour the rice flour into the pot gradually while stirring constantly to prevent lump formation.
- If the mixture is still too liquid, add more rice flour and continue stirring until the mixture is smooth and firm (or as you want the consistency to be)
- After one minute, gradually add a small amount of the hot water you set aside earlier, then cover the pot and bring to a boil over low heat for thirty seconds.
- Mix thoroughly, and your Tuwo shinkafa is complete.
